🌱Healing Borscht for Dampness + Liver Support

🥕 Ingredients:

(about 4 servings)

Base vegetables

  • 2–3 medium beets, peeled and grated or diced

  • 1 medium carrot, grated

  • 1 small onion, chopped

  • 1–2 cloves garlic, minced

  • ½ small cabbage, finely shredded (about 2 cups)

  • 1 small celery stalk or fennel bulb, finely chopped (helps drain dampness)

Broth

  • 5–6 cups bone broth or light vegetable broth (homemade or low-sodium)

  • 1 tbsp apple cider vinegar or juice of ½ lemon (helps digest and move Liver Qi)

Warming herbs & spices

  • 1–2 tsp fresh grated ginger

  • ¼ tsp turmeric powder

  • 1–2 pinches cinnamon or cardamom (balances sweetness)

  • Black pepper to taste

  • Small handful parsley or dill for garnish

Optional grounding grains

  • ½ cup cooked pearl barley (prepare separately and add at the end)

Healthy fats

  • 1 tsp olive oil or ghee (optional — helps absorb carotenoids and adds warmth)

Directions:

  1. Warm the pot:
    Sauté onion, garlic, celery/fennel, and ginger in olive oil or ghee until fragrant.

  2. Add root veggies:
    Stir in beets, carrots, and turmeric. Cook 3–4 minutes to lightly soften.

  3. Add broth + acid:
    Pour in broth and apple cider vinegar or lemon juice. Bring to a gentle simmer for 20–25 minutes, until beets are tender.

  4. Add cabbage last:
    Stir in shredded cabbage and simmer another 5–10 minutes. (Keeps it crisp and light.)

  5. Finish & balance:
    Add salt, pepper, and a pinch of cinnamon or cardamom if desired.
    Stir in cooked barley right before serving.

  6. Garnish:
    Top with fresh parsley or dill and a drizzle of olive oil or a spoon of fermented veggies (instead of sour cream) for digestive enzymes.
