HORCHATA — A Cozy Ritual for Flow and Balance

Horchata has a long and fascinating history. Originally from Spain and later embraced in Mexico, it was traditionally made from soaked rice, nuts, cinnamon, and water—a simple, nourishing drink to refresh the body, settle digestion, and support energy. Across cultures, variations of horchata have been used to balance heat and cold, support circulation, and restore vitality after long days of labor or travel.

Here in damp Vancouver, I often notice people carrying that same heavy, sluggish quality the ancients would have recognized—the energy we call “dampness.” The body feels weighed down, digestion slows, and clarity can dim. This horchata is designed to move energy, gently awaken the inner fire, and restore flow—all while being easy to digest and deeply comforting.

Vancouver Damp-Clearing Almond Milk Horchata

Ingredients (serves 4–6)

  • 1/2 cup uncooked white rice

  • 4 cups water, divided

  • 1/4 cup raw almonds, soaked 4–6 hours

  • 1–2 cinnamon sticks (or 1 tsp ground cinnamon)

  • 1 small piece fresh ginger (grated, optional)

  • 2–3 tbsp honey or maple syrup (adjust to taste)

  • 1 tsp vanilla extract (optional)

  • 1 cup unsweetened almond milk

Instructions

  1. Cook the rice lightly: Rinse rice, then simmer in 2 cups water for 10–12 minutes until just soft. This reduces damp-forming properties while keeping it grounding.

  2. Blend: Add cooked rice, soaked almonds, cinnamon sticks, and ginger to a blender. Blend until smooth.

  3. Strain: Pour the mixture through a fine sieve or cheesecloth into a pitcher. Discard solids.

  4. Add almond milk and sweetener: Stir in almond milk, remaining water, honey or maple syrup, and vanilla if using.

  5. Serve slightly warm or at room temperature for best digestion. If chilled, allow it to warm slightly before drinking.

  6. Optional: Sprinkle a pinch of cinnamon or nutmeg on top for extra warming energy.
